Wildly Tasty Chicken & Potatoes in Lemon Sauce with Vegetables
Ingredients
8 Wildly Tasty Chicken Bone-in Thighs marinated 24 hours *WTC recipe
2 tbsp olive oil
1 tsp Kosher Salt
1 tsp ground black pepper
7 tbsp butter
1 tbsp minced garlic
½ cup Wildly Tasty Chicken Broth *WTC Recipe
1/3 cup lemon juice
1 pkg Baby Bella mushrooms wash and cut
1 lb baby rainbow potatoes washed
(Yukon gold, or redskins can be substituted)
4 carrots peeled or fresh green beans wash & cut
½ tsp paprika
¼ tsp crushed red pepper
½ tsp thyme
½ tsp oregano
2 tbsp parsley
1 sliced lemon
Directions
In large skillet heat oil, add chicken (I recommend our Wildly Tasty Chicken Thighs!), salt, and pepper
Cook until golden about 4 minutes, turn and repeat
Remove chicken and discard oil
Melt butter and garlic in skillet
Pour in chicken stock and bring to boil
Add lemon juice
Remove from heat
Add potatoes and vegetables to slow cooker, place chicken on top, layer in lemon slices
Sprinkle paprika, pepper thyme and oregano
Pour garlic butter over chicken and potatoes
Cook 4 hours or until tender
Serve while wearing our Wildly Tasty Chicken Embroidered Apron.
Place chicken and potatoes on plates
Spoon sauce over
Sprinkle parsley
