WTC Recipe - Sweetcorn Sesame Chicken
Wildly Tasty Sweetcorn Sesame Chicken
Ingredients:
Chicken
1 lb Wildly Tasty Chicken breast or thighs chopped
Soy sauce to marinate 24 hours prior
1/4 cup soy sauce
2 Tbsp water
1 Tbsp toasted sesame oil
3 Tbsp brown sugar
1 Tbsp rice vinegar
1 tsp ginger (grated fresh ginger if you have it)
2 cloves garlic, minced
1 Tbsp sesame seeds
1/2 Tbsp cornstarch
Vegetables
2 Tbsp diced red Onion
1/4 Sweet Bell pepper chopped
2 Tbsp sesame oil
2 Carrots cut length ways into bite size pieces
1 cup sweet corn
1 cup cherries tomatoes cut in half for color Optional
Serve
1 green/spring onion choppedGrated lettuce- salad cress, spinach, cabbage etc… your choice
Cooked Jasmine Rice - Optional
Recipe Directions:
Step 1: Marinate Wildly Tasty Chicken 4-12 hours in Soy sauce
Step 2: Prepare the sauce. In a small bowl stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, fresh grated ginger, minced garlic, cornstarch, and sesame seeds. Set the sauce aside.
Step 3: Swirl 2 Tbsp sesame oil in a frying pan/wok to heat. Cook the onions, sweet pepper, carrots, and corn for 3 minutes. Take out of wok. Set aside.
Step 4: Swirl 2 Tbsp of sesame oil in wok to heat. Add marinated chicken, cook until the chicken pieces are all white and near cooked.
Use 1 egg and 2 Tbsp corn starch, salt & pepper to batter chicken pieces for optional fried chicken.
Step 5: Pour sauce over top of cooked chicken. Stir gently allowing sauce to thicken as it simmers. Turn off heat. Stir in chopped green/spring onion to chicken mixture.
Step 6: SERVE
Mix vegetables with salad greens and place on serving platePlace chicken mixture on top
Sprinkle with sesame seeds
Optional serving method
Center cooked jasmine rice on platePlace vegetables on top of bed of rice
Spoon chicken mixture on top
Sprinkle with sesame seeds
